Riddling
Riddling ensures that the dead yeast cells collect in the neck of the bottle.
During the riddling process, the bottle is rotated very slowly from a horizontal to a vertical position so that the dead yeast cells can detach from the rim and, as it were, form a plug in the neck. Depending on the winemaker, this process takes about a week. We do not do this manually, but have invested in a gyropallet. This is a device that makes a very slight movement every three hours.
